Preheat oven to 350 degrees. Grease a large muffin pan
Tear one slice deli meat into large pieces and place in the bottom of the muffin cup. Add cheese and other ingredients you want (spinach, chopped peppers, mushrooms, diced tomatoes, etc)
Pour egg beaters over the ingredients, filling the cups to the top. This make take several times as the egg beaters float to the bottom. Keep filling until the cups are full.
Bake 20-25 minutes until the eggs are stiff on top.
Once cooled, you can refrigerate these. When ready to eat place 1 or 2 on a microwave safe plate, and heat about 1 minute, more if needed.
