Award Winning Chili

Our church had a chili cookoff a few weeks ago (while it was still record breaking mid 90’s temperatures in October) and I won 3rd place. 

Ingredients

  • 2 16-ounce cans light red kidney beans, drained
  • 1 16-ounce can pinto beans, drained
  • 3 14.5 ounce cans petite diced tomatoes, undrained
  • 2 pounds ground chuck
  • 1 pound (roll) breakfast sausage
  • 1 sweet yellow onion, coarsely chopped
  • 1 green pepper, seeds removed and coarsely chopped
  • 3 cloves garlic, crushed
  • 4 Tablespoons 6 chili pepper powder (I found this at Kroger in the Premium Select brand)
  • 1.5 teaspoon ground pepper
  • 1.5 teaspoon ground cumin
  • 1.5 teaspoon salt

Instructions

  1. Completely cook ground beef and sausage together. Drain grease.
  2. Put all ingredients in Crock Pot in order listed. Stir once.
  3. Cover and cook on Low for 10-12 hours or High for 5-6 hours
  4. Top with whatever toppings you prefer (shredded cheddar cheese, chips, sour cream, etc)
