Breakfast Burriots
Ingredients

- 1 lb/roll Breakfast Sausage or any choice or mixtures of breakfast meats (bacon, ham, etc)
- 1 bag diced potatoes (and onions if included)
- 6 eggs
- 1 can diced chilies, drained
- 1 can mushrooms, drained
- shredded cheese
- sour cream
- salsa
- tortillas
Instructions
- Brown your sausage. Add your potatoes while you are browning so they will be fully cooked. Drain any remaining grease once the sausage is fully cooked
- In a small bowl, lightly beat your eggs.
- Push sausage and potato mixture to the side. Pour your eggs in the skillet and stir until cooked, as you would scrambled eggs.
- Once the eggs are cooked, mix in with the sausage and potato mixture. Add in the chilies and mushrooms. Heat thoroughly
- Spoon burrito mixture into a tortilla. Wrap into a burrito. Top with toppings of your choice.
- To cut carbs, don’t use a tortilla. Just spoon the mixture into a bowl, top with your choice of toppings, and enjoy.
