Breakfast Burriots

Ingredients

  • 1 lb/roll Breakfast Sausage or any choice or mixtures of breakfast meats (bacon, ham, etc)
  • 1 bag diced potatoes (and onions if included)
  • 6 eggs
  • 1 can diced chilies, drained
  • 1 can mushrooms, drained
  • shredded cheese
  • sour cream
  • salsa
  • tortillas

Instructions

  1. Brown your sausage. Add your potatoes while you are browning so they will be fully cooked. Drain any remaining grease once the sausage is fully cooked
  2. In a small bowl, lightly beat your eggs. 
  3. Push sausage and potato mixture to the side. Pour your eggs in the skillet and stir until cooked, as you would scrambled eggs. 
  4. Once the eggs are cooked, mix in with the sausage and potato mixture. Add in the chilies and mushrooms. Heat thoroughly
  5. Spoon burrito mixture into a tortilla. Wrap into a burrito. Top with toppings of your choice.
  6. To cut carbs, don’t use a tortilla. Just spoon the mixture into a bowl, top with your choice of toppings, and enjoy.
