Cheesy Sausage, Eggs and Grits Breakfast Casserole

Ingredients

  • 2 pounds mild breakfast sausage
  • 4 cups water with salt
  • 1 1/4 cups quick grits (uncooked)
  • 4 cups sharp cheddar cheese (shredded)
  • 1 cup milk
  • 1/2 teaspoon thyme
  • 1/8 teaspoon garlic powder
  • 4 large eggs (beaten)
  • paprika

Instructions

  1. Brown sausage, drain well and set aside
  2. Bring salted water to a boil in a large saucepan/soup pan and stir in grits
  3. Return to a boil, cover and reduce heat. Simmer 5 minutes stirring occasionally
  4. Add cheese, milk, thyme, and garlic powder. Stir until cheese melts.
  5. Stir in sausage and eggs
  6. Spoon mixture into lightly greased 13x9x2 inch casserole dish
  7. Sprinkle with paprika
  8. Bake at 325° for 1 hour or until golden and thoroughly heated. LEt stand 5 minutes.
