Chicken or Veal Picatta

So many times we have certain recipes at nice restaurants and think we could never make it at home. So many recipes are very easy and so much less expensive than the restaurnats charge. This is one of those recipes!

Ingredients

  • 1 package thinly sliced boneless chicken breasts
  • 1 scoop all purpose flour
  • 3/4 stick butter
  • 2 Tablespoons lemon juice
  • salt and pepper
  • capers (if desired)

Instructions

  1. Add flour to a ziplock bag. Add chicken breasts, seal, and shake to coat completely. Shake off excess before you put in the skillet.
  2. Heat 4 Tablespoons of butter in a large skillet over medium to medium high heat until melted. Add chicken and sprinkle with salt and pepper. Cook until tender and brown, about 4 minutes per side.
  3. Remove chicken to (heated) platter. Heat remaining 2 Tablespoons of butter until melted. Add lemon juice and capers (if desired) and stir about 30 seconds.
  4. Pour over chicken on platter.

Notes

You can always add more butter and lemon juice (and capers) if you want more of the sauce poured over your chicken. Recipe courtesy of David M. Russell
