Mattie Lee’s Ribbon Cake with Homemade Icing

Recipes carry memories! For some it may be a favorite meal to celebrate. It may be certain recipes everyone knows you will make and they look forward to when you bring it to tailgate, a cookout, or a family reunion. This cake recipe holds a special memory of my Grandmother. She always made this to celebrate birthdays, starting with my mom, who was the oldest of 3 children and then the grandchildren. Grandmom was making this cake for my mom’s 1st birthday on December 7th, 1941. She had the radio on while baking and the radio announced the bombing of Pearl Harbor.

Ingredients

  • 3/4 cup Crisco
  • 2 cups sugar
  • 1 1/2 teaspoon` salt
  • 3 cups sifted cake flour
  • 4 teaspoons baking powder
  • 1 1/4 cups water
  • 4 egg whites
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon baking soda
  • 2 Tablespoons cocoa powder
  • 2 Tablespoons water
  • 34 drops red food coloring
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract

Instructions

  1. Blend together Crisco, sugar, and salt. Sift flour with baking posder. Add flour mixture , alternating with water. Fold in beaten egg whites.
  2. Divide batter evenly into 3 bowls.
  3. For the dark layer add dinnamon, nutmeg, cloves, baking soda, cocoa, and 2 T. water. Blend completely.
  4. For the pink layer add 3-4 drops red food coloring and vanilla extract. Blend completely.
  5. For the white layer add almond extract. Blend completely.
  6. Bake in greased 9″ round cake pans at 350° 25-30 minutes. Cool. Put together with icing (recipe attached)

Notes

Icing for Ribbon Cake

2 1/2 cups granulated sugar

3 Tablespoons white corn syrup

1 cup water

3 egg whites, stiffly beaten

1 1/2 teaspoons vanilla extract

  • Boil sugar, white corn syrup and water to 238° or until syrup spins thread. Pour slowly over stiffly beaten egg whites, beating constantly.
  • Add vanilla extract. Beat to spreading consistancy.
  • Ice cake. Dark layer 1st (goes on the bottom), pink layer in the middle, and top layer is white.
