These are a little time consuming to make – but worth it!

Ingredients

Scale
  • 1 lb breakfast sausage
  • 1 onion, chopped
  • 1 10-oz pkg frozen spinach, thawed and drained
  • 1 8-oz pkg cream cheese
  • 1 egg, beaten
  • 3 cups shredded mozzarella cheese, divided
  • 2 cups shredded cheddar cheese
  • 1 cup cottage cheese
  • 1/4 cup parmesan cheese
  • 1/4 teaspoon salt 
  • 1/4 teaspoon pepper
  • 1 box jumbo pasta shells

SAUCE

  • 1 29-OUNCE CAN TOMATO SAUCE
  • 1 teaspoon dried minced onion
  • 1.5 teaspoon dried basil
  • 1.5 teaspoon dried parsley
  • 2 cloves garlic, minced
  • 1 teaspoon sugar
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

Brown sausage and onion, drain fat. Mix in spinach and all other ingredients except for 2 cups mozzarella. Cook shells according to directions. Stuff shells well with mixture and place open side down. Pour prepared sauce over shells. Bake at 350 degrees for 40 minutes covered with aluminum foil. Uncover, sprinkle 2 cups mozzarella on top and bake 5 minutes more. Let stand 5-10 minutes before serving.
